Fall treats: A guide to everything pumpkin

Pumpkin spice has become an essential flavor during the colder months. Whether it’s a latte, snack or a candle it’s just the thing to get you in the mood for fall.

If you just can’t get enough of this spicy flavor, here are some recipes you need to try.

Pumpkin Spice Latte:

If the line at Starbucks is getting to be too much for you to handle, try making your own latte in your dorm.

Ingredients:

1 cup of milk, 2 tablespoons of pure pumpkin puree, 1 tablespoon of sugar, ¼ teaspoon of pumpkin pie spice, ¼ teaspoon of pure vanilla extract and 1 cup of coffee or a latte.

Step 1: Combine the pumpkin spice, pumpkin puree and brown sugar in a small saucepan over low heat. This should be mixed frequently for up to three minutes.

Step 2: Continue to mix the ingredients while adding milk to the mixture slowly. Continue this process until the mixture begins to bubble.

Step 3: Remove the saucepan from the stove and pour the mixture into a blender. Place the lid on the blender and hold hand towels down on top of the lid.

Step 4: Blend the mixture until it is a foamy consistency.

Step 5: Add the foamed milk into a cup of coffee, topping it with your choice of whipped cream and pumpkin spice.

Pumpkin Pancakes:

Save meal card money by treating yourself to homemade pancakes.

Ingredients:

1 ¼ cups of flour, ½ teaspoon of cinnamon, ½ teaspoon of ginger, ½ teaspoon of nutmeg, ½ teaspoon of salt, 2 teaspoons of baking powder, 2 tablespoons of sugar, 1 cup of milk, 6 tablespoons of pumpkin puree, 2 tablespoons of butter and 1 egg.

Step 1: You’ll need two bowls; the first bowl is for the flour, sugar, baking powder, spices and salt.

The second bowl will have the milk, pumpkin puree, butter and egg.

Step 2: Whisk each bowl separately until the ingredients are blended.

Step 3: Slowly pour the second bowl with the liquids into the first bowl while continuing to blend the ingredients together.

Step 4: Spray the pan or skillet with Pam and pour ¼ cup of batter onto the pan. Cook each side of the pancake for three minutes on medium heat.

Complement your breakfast with maple syrup, butter or cinnamon sugar.

Pumpkin Cheesecake:

For a sweet fall treat, try a pumpkin cheesecake.

Ingredients:

1 can of pumpkin, 1 package of cream cheese, ¼ teaspoon of vanilla, three eggs, ¾ cup of sugar, ½ cup of Betty Crocker Bisquick mix, and 1 ½ teaspoons of pumpkin spice.

Step 1: Pre-heat the oven to 350 degrees.

Step 2: Place all of your ingredients into the blender and blend on high until it’s a smooth consistency. Pour this mixture into a pie tin.

Step 3: Bake for 45 minutes, take the pan out and let it cool for an hour.

Step 4: Refrigerate for three hours or until chilled.

Step 5: Garnish the pie with caramel drizzle, pumpkin spice and a side of whipped cream.

Living on campus shouldn’t limit you from exploring new recipes.
